Delicious Coconut Carmel Slices

Ingredients


Base:

  • 1 cup pitted dates

  • 1 cup cashew nuts

  • 2 tbs coconut oil


Middle:

  • 1/4 cup tahini (hulled)

  • 1 cup dates

  • 2 tbs maple syrup

  • 1/2 cup rice milk


Top:

  • 1/2 cup coconut oil

  • 2 tbs maple syrup

  • 1 cup cocoa powder

  • 1/2 cup rice milk

  • 3 tbs coconut flakes

Method


1) Line a cake tin with baking paper

2) Blend all of the base ingredients together in a food processor

3) Place base ingredients into cake tin and flatten evenly with the back of a spoon

4) Place all of the middle ingredients in the food processor and blend. Pour mixture over the base ingredients in tin and place in freezer

5) Melt the cocoa powder, oil and maple syrup in a saucepan. Careful as it can burn easily.

6) Remove saucepan from heat and add the rice milk and stir.

7) Once the middle layer has become solid, pour the cooled chocolate topping over and decorate with coconut flakes. Please in the freeze until set.


* If you prefer less sweet desserts use less maple syrup in the chocolate sauce. Also best to make this for a group as it is very easy to consume alone : ) !!!
