Cauliflower Pizza

Ingredients:
Head of cauliflower/ 300g diced cauliflower rice
1 egg
2 tbsp chopped basil
1 tbsp chopped oregano
2 tsp salt
1 tsp pepper
64g grated cheese - mozzarella or parmesan
*** I have made cauliflower pizza by processing a head of cauliflower and drying it out to make the rice. However this is quite a lengthly process as the rice needs to be completely moisture free so that you don't end up with a soggy pizza base. Thankfully Coles and Woolies stock Cauliflower rice which I find much more convenient.
*** If you prefer a thick pizza base, simply double the quantities of cauliflower (600g) and use two eggs.
Method
Base:
1) Place cauliflower rice into a baking dish and put in over for 20 minutes at 180 degree so as to dry off the rice completely
2) Mix egg, oregano, basil, salt and pepper in a mixing bowl and add dried cauliflower rice
3) Line a pizza baking tray with baking paper and add mixture. Flatten dough with the back of a spoon.
4) Place pizza in oven for 20 minutes
5) Remove from over and turn oven pizza (gently!). Place back in the oven and cover for another 20 minutes. Both sides should now be evenly brown and sturdy to touch.
Topping:
6) I use Jamie Olivers tomato sauce recipe
7) Sauté desired vegetables for topping, we like red and yellow pepper, mushrooms, courgette
8) Add tomato sauce, vegetables, fresh basil and mozzarella cheese (fresh or grated)
9) Cook in over at 180 degrees for 20 minutes
