Chocolate Chip & Macadamia Cookies

Ingredients
125g almond butter
2 tbs coconut oil
2-3 tbs maple syrup (depending on how sweet you would like them)
1 tsp vanilla
2 large eggs
1/2 tsp baking soda
1 tsp cinnamon
64g coconut flour
60g chocolate chips (I dice a bar of Lindt 90% chocolate- if you have a sweet tooth go for a lower percentage cocao e.g 70%)
50g chopped macadamias
Method
1) Blend almond butter, coconut oil and maple syrup in a bowl
2) Add eggs and vanilla and blend until smooth
3) Fold in coconut flour, baking soda and cinnamon and mix
4) stir in chocolate chips and chopped macadamias ( or any nuts you prefer)
5) Bake in over at 180 degrees for 7-10 mins. Cool on a wire tray.
* It is important not to mix all of the ingredients together at once as the mixture is quite stiff, follow steps above to avoid needing a new mixer :)
Cookies are fab served with halo top ice cream or natural yogurt or simple a cup of tea :)
